Chop and sauté onions in 1tsp of coconut oil
Chop the garlic and all of the vegetables (except the cavelo nero) and add to the onions
Gently cook the veg on a low heat. At the same time boil some water and add the pasta to cook
Once the veg is soft, add the pesto, stock and oatly cream, salt & pepper and the cavelo nero. Gently simmer for 5 mins.
Drain the pasta and stir in with the sauce. Mix well and serve!
If you are not a vegan you could use normal cream and add some parmesan cheese to the sauce.
