- Sweet potato380 Grams
- Coconut oil1 Tablespoons
- Tahini1 Tablespoons
- Water3 Tablespoons
- Lemon, juice1/2
Peal and cut the sweet potato into evenly sized cubes
Steam your sweet potatoes in a pan for around 10 minutes or until soft.
Transfer the sweet potato to a bowl and roughly mash.
Stir in the coconut oil
In a glass, whisk together your tahini, lemon juice and water until thick and creamy and then stir through the potatoes.
Chop and stir through the parsley
