First, under low heat, sauté olive oil, onion, carrots, zucchini and parsley in a large saucepan for five minutes.Stir occasionally, so that nothing burns.
After that, add Beef and the vegetable stock. Make sure to boil it for approximately twenty minutes.
Add tomato paste and let it boil for five minutes. Taste the sauce with salt and pepper.
In the last two minutes squeeze the garlic into the sauce. At the same time, prepare the spaghetti, according to your package instruction.
Personally I like to spread feta cheese or mozzarella on my plate.
