- 1 kg of tomatoes.on the vine is preferable but not essential and even canned will work perfectly
- garlic6 cloves
- oregano3 Teaspoons
- veg stock or waterchicken or pork stock would also work perfectly
- fresh basil1 bunch
- olive oil
- sour cream1 Cups
- salt and pepper
- worcester sauce
cut peppers and toms into chuncks wrap the garlic in foil, place in a baking tray with olive oil salt and pepper and roast on 170 for 30 mins
remove from oven and add to a large pan all the roasted veg plus the stock and herbs and simmer for 20 mins
blend soup with a hand blender in the pan seasoning to taste with salt, pepper and worcester sauce
pour into bowls and finish with a dash of olive oil and sour cream top with fresh basil leaves.
Serve of course with fresh crusty bread and butter.
A perfect dish for all the family. As always emit the seasoning until the end if you are weaning a tiny one.
