In a big casserole insert the olive oil, the washed and chopped in small pieces spring onions and the washed and chopped spinach.
Sauté until the spinach looses its volume and brings out its water.
After that insert the rice and let it absorb the water from the spinach. Add also 1,7 litres of warm water.
Let it cook for fifteen minutes. (Stir occasionally)
Finally add salt, nutmeg and butter, and cock the rice with spinach until rice is done (5-10 min).
If needed taste with salt.
Serve the dish with Feta cheese or any other cheese of your liking.
