- Olive oil or butter2 Teaspoons
- Flour1 heaped Tablespoons
- Milk1 Cups
- Cheese (I use hard goats cheese)4 heaped Tablespoons
In a pan heat the olive oil on a medium heat then add the flour. Use a whisk to stir it till it starts to form a paste.
Slowly add the milk and whisk fast, as it starts to absorb the milk add some more, keep doing this until it becomes a thick sauce. You must stir fast otherwise it will become lumpy. (If it does you can always cheat and pop it in the blender!)
Finely grate the cheese and put into the sauce on a low heat so it melts.
At this point you can use it for a Mac and cheese or just stir through pasta, however I like to add chopped mushrooms, diced spinach, fish or chicken before mixing through pasta and Rudy my little toddler loves it. And so does my husband and me!
