- Gluten free flour (I use Doves plain flour)150 Grams
- Xanthan gum1 Teaspoons
- Baking powder1 Teaspoons
- Bicarbonate of soda1 Teaspoons
- Salt1/4 Teaspoons
- Ground cinnamon1 Teaspoons
- Dates100 Grams
- Butter (or coconut oil)180 Grams
- Grated carrot (approx 3)180 Grams
- Cream cheese100 Grams
- Honey1 Teaspoons
Pre-heat oven to 180 deg fan
Line a 8 inch loaf tin with greaseproof paper
Weigh out your flours and put into a bowl. Add the xanthan gum, cinnamon, baking powder, bicarbonate of soda and salt to the flour and mix so that its completely incorporated
Melt the butter
In a food processor blend the dates with the eggs, if you don’t have one finely chop them and mix into the whisked eggs.
Grate the apple & carrot and add the melted butter and stir.
Mix the apple and carrot into the date and egg mixture
Add in the flour mixture and stir till combined
Pour into the loaf tin and pop into the oven for 35-40 minutes
Leave to cool then combine the cream cheese and honey and spread over the top. sprinkle a little cinnamon over the top.
