Pre-heat oven to 180ºC.
Place the breadcrumbs into a bowl. Finely chop the herbs and add to the bowl along with the lemon juice and rapeseed oil. Use your hands to mix really well.
Cut the cod fillets into bite sized portions, remove any bones, then place on a baking tray lined with parchment paper.
Use your hands to divide the breadcrumb mixture to the top of each piece of fish, pressing down tightly.
Bake for 15 minutes until cooked through. The crumb should be golden and crispy.
Serve with sweet potato fries and peas.
