- Courgette (approx 1)200 Grams
- Ground coriander1/2 Teaspoons
- Olive oil2 Teaspoons
- Garlic cloves2
- Frozen peas60 Grams
- Spinach2 handfuls
- Water1/4 Cups
- Cheese (feta, or a cheddar)30 Grams
Dice the courgette, garlic and roughly chop the spinach.
In a frying pan add the olive oil, garlic, coriander, courgette and cook for 2-3 minutes. Add the water, spinach and peas and cook until all water is absorbed and veg is soft.
Put into a blender with the cheese and blend until smooth.
