You can serve this as a simple pasta sauce or spread on chicken or fish and bake. It also freezes really well so pop into some freezer friendly weaning pots for a very quick supper.
Dice the courgette, garlic and roughly chop the spinach.
In a frying pan add the olive oil, garlic, coriander, courgette and cook for 2-3 minutes. Add the water, spinach and peas and cook until all water is absorbed and veg is soft.
Put into a blender with the cheese and blend until smooth.
