- Oats400 Grams
- Medjool dates20
- Stewed Apples150 Grams
- Hot water400 Milliliters
- Raisins200 Grams
- Chai Seeds4 Tablespoons
To start with mix the chia seeds with a few tablespoons of water until they swell and soften.
Remove the stones from the dates & put them in a blender with hot water & fruit if using. Blend until combined.
Weigh all the other dry ingredients into a large bowl & then add the pureed date & fruit mixture & the chai seeds.
Line your baking tray (approx 8 inch square). Spread the mixture into the tin & flatten with the back of a spoon. Cook in a pre heated oven at 180 degrees for 40-45 minutes until lightly golden on top.
Allow to cool & cut into small squares using a sharp knife.
Store in the fridge (or freeze) but allow to warm up before eating.
Top tips - try with different seasonal fruit - eg rhubarb, apples, pears, plums and for a grown up version the addition of nuts and stem ginger is delicious.
